Of course, what’s a playful winter retreat without a cocktail or two? The Veuve Clicquot Chalet knows what you want in your glass, which is why they’re also serving frosty Polish Mules or espresso martinis to keep you snug.
As for your plate, classic cold weather bites will meet the not-so-cold weather in Hervey Bay scallops with cauliflower puree and chorizo crumb, or whole baked brie with thyme and crostini. They’re also serving up a Queensland quintessential in the form of a citrus-poached Moreton Bay Bug croissant with lime mayo, chips with truffle aioli, and a glass of Veuve Clicquot Brut available for a chill $40.

Ski your way down to Customs House as walk-ins are welcome or book an individual chalet for a maximum of six people on Fridays and Saturdays from 4pm, and Sundays between midday and 5pm (a $50 per person deposit is required). With premium bubbles, irresistible bites and Brissy’s best views, you’ll be wishing for a miracle so you can be snowed in but be speedy! The igloos are almost full.
