Following the success of Fortitude Valley’s hidden, New York-style restaurant, Mr Vain, Brisbane’s foodie landscape is set to welcome a bold new player from the same culinary team. Coming soon to Fortitude Valley, TABOO is taking over from Dirty Sultan, promising a modern Thai oasis hidden on the rooftop of The Constance Hotel.
Fusing the elements of a secret garden with the edge of a contemporary rooftop restaurant and bar, TABOO is designed to awaken the senses, offering an immersive experience where sight, sound, taste, touch, and scent come together.
Tucked away above the bustling streets, TABOO invites guests into a monochrome-green retreat – moody, polished, and stylish. By day, the open-air rooftop setting carries the aroma of fire-kissed spices and citrus-infused cocktails. By night, it transforms into a sultry, sophisticated haven, setting the stage for Brisbane’s newest late-night rendezvous.
A celebration of Thai flavours, honouring tradition while embracing bold, modern interpretations, the menu brings the vibrant, punchy elements of Thai cuisine to life with unexpected twists. Guests can expect explosive flavour profiles, delicate seafood creations, and curries reminiscent of bustling street markets, each dish designed to be shared and savoured.
Complementing the menu is a carefully curated drinks selection that redefines Brisbane’s approach to wine and cocktails. Crafted to enhance the depth of Thai flavours, the cocktail list delivers fresh, innovative pairings, while an extensive wine collection – featuring over 100 hand-selected bottles – showcases everything from classic labels to progressive, new-wave producers. A specialty range of effervescent Pet-Nat wines further elevates the offering.
“Creating a restaurant is about more than just food – it’s about building an experience that leaves a lasting impression,” says founder Dilan Ildes. “We’ve been incredibly humbled by Brisbane’s love for Mr Vain, and with TABOO, we’re bringing something entirely new to the city.”
