Coming In Hot! The Gemelli Crew Reveals Their Latest Gold Coast Gem

When it comes to Italian done right, Gemelli is the name that always delivers. From Broadbeach to Nobby Beach and Brisbane’s James Street, the Carney brothers — Alec, James and Paul — have nailed the formula: handmade pasta, wood-fired pizza, and effortless hospitality. Now, they’re bringing their signature style to Carrara with Papa Rolly’s — a fresh, casual take on the classics.

A nod to their 2016 food truck and their late grandfather, Nonno Rolando, Papa Rolly’s is all about unfussy, feel-good Italian in a neighbourhood setting. Tucked away on Pappas Way, the 85-seat space will serve up handmade pastas, perfectly blistered pizzas, and even a few old-school family recipes — like Nonno Rolando’s slow-cooked peas (yes, they’re a thing).

Expect a space that feels familiar but elevated — exposed brick, warm lighting, and a laid-back energy that makes it just as good for a long lunch as it is for a quick pizza pickup. And because no Italian experience is complete without dessert, Gelato Gemelli will be dishing up 12–14 flavours of house-made gelato, perfect for a post-pasta treat or a takeaway tub for later.

Oh, and here’s the kicker — it’s BYO (cin cin!). Opening early April, Papa Rolly’s is set to shake up the Carrara dining scene. Consider this your heads-up — it’s going to be good.
