Inside Fortitude Valley’s Funky New Restaurant & Record Bar

Records on repeat. Retro fit-out. Ragingly good cocktails. Let the good times roll. Opening its doors later this month, Fortitude Valley is welcoming a new two-level restaurant and bar where the vinyl selection is as sophisticated as the menu. 

Offering social Brisbanites a space to share moments over great food, crackling vinyl, and the occasional twinkle of a disco ball, Never Enough is the latest from Trad Nathan and Tyla Dombroski – the crew behind beloved Brisbane and Sydney venue, Crowbar.

Taking up residence in the Valley’s heritage Apothecaries Hall, the venue will balance late-night vibes with a refined dining experience. Did someone say “you get the best of both worlds”?

“Never Enough is really about the things we love: food, drinks, music, art and being around people,” says owner Dombroski, and we say amen to that!

In the kitchen

Taking centre stage in the kitchen is Executive Chef Trent Lymn, who takes his experience as former Head Chef of The 203, bringing his signature produce-driven cuisine to Never Enough.

Having well and truly earned his stripes working in the acclaimed kitchens of Adelaide’s 2KW, Barrio, and Bar Riot, combined with stints in London and Argentina, Lynn is taking this most recent opportunity as a way to bring a new food-forward concept to the valley. 

Taking to the menu, Lynn says it “will focus on seasonality, ageing, and late-night small plates designed.” The concept is simple: chef-led in the kitchen, considered in the bar offering, and then vibes-based in the atmosphere. 

Each level will have a distinct presence, with the downstairs focusing on the food, serving as the main dining room for the venue, where the upstairs leaves room for a more relaxed bar setting. Alongside the considered drinks offering, the upstairs bar will serve lighter plates, including cold seafood and charcuterie.

The perfect complement to Lynn’s carefully crafted cuisine is the drinks menu, injected with an equal amount of care. You can expect a curated wine list alongside fortified wines, aperitifs, amaros, and a selection of premium spirits perfectly chosen to complement the energy of the space.

Far from your average bar and restaurant, Never Enough will also be a true cultural hub, showcasing the best and brightest local talent across the art, music, and creative industries.

A result of the founders’ long-lasting love affair with supporting local creative industries, the venue will also be a space for occasional exhibitions, creative residence, and industry gathering – so watch this space.

This dual-level venue will be an equally colourful and flavourful journey brought to Brisbane with the help of Kit Bettison from Alida & Mille, and a sharp brand identity from Sydney designer Paul Tooth.
