On Sunday, 27 April, Central 中環 is hosting a one-day-only lunch you do not want to miss: B2B: A Franco-Canto Culinary Affair. The name alone hints at the magic that awaits — a delicious meeting point between French elegance and Cantonese soul.
Back by popular demand, Brisbane’s own Brendan Fong is returning to the local food scene, teaming up once again with his longtime friend and fellow culinary heavyweight Benny Lam, Executive Chef of Central 中環 and Southside. If you were lucky enough to experience their first collab at Southside, you’ll know these two have serious kitchen chemistry. Now, they’re cooking up the next chapter — and it’s shaping up to be even more refined, playful, and irresistibly delicious.
The four-course lunch (plus dessert, of course) is all about balance, seasonality, and seamless cultural crossover. French technique meets Cantonese depth, all elevated by the freshest ingredients autumn has to offer.
So, what’s on the menu?
You’ll start with a refined RAW + SNACK selection that reads like poetry: Rock Oyster with Champagne Sabayon, Raw Scallop with White Cloud Mushroom and Beurre Noisette, and even Smoked Foie Gras served on Youtiao (yes, you read that right). Then comes an elevated take on Dim Sum — think Pork & Pistachio Siu Mai, Lobster Har Gow glistening with caviar, and the most elegant Prawn Toast you’ve ever seen.
From there, prepare for pure indulgence: Moreton Bay Bug Thermidor with House XO Sauce, Smoked Duck à l’Orange, and a perfect Cantonese classic — Stir-Fried Red Emperor with Ginger & Shallot, served alongside Chicken Fat Rice Pilaf.
To finish? A delicate Jasmine Tea Crème Brûlée — the kind of dessert that leaves a lasting impression.
Tickets are $144pp, with wine pairing available for $88 if you’re in the mood to toast this culinary dream team properly. Seating is limited, so bookings are essential, and note: due to the nature of this curated menu, dietary substitutions can’t be made.
