Hosted on Friday, 27 March, Jewels & the Sea invites guests to embark on a thoughtfully curated seven-course seafood journey, each dish expertly crafted by Head Chef Vikash Gurung and paired with premium wines. From indulgent caviar bumps to Tasmanian rock lobster with salmon ravioli and Patagonian toothfish finished with fermented soybean glaze, tarragon sauce, and saltbush, the menu unfolds across a series of oceanic chapters – Shoreline, First Tide, Rising Tide, Open Waters, High Tide, Deepwater, Still Waters, and After The Tide – guiding diners through a true tidal wave of flavour.
As the evening unfolds, a live three-piece jazz ensemble sets the soundtrack to the dinner with smooth, atmospheric sounds.
Between courses, guests will enjoy an intimate showcase of Imperial Jewellery’s most exquisite bespoke and vintage-inspired creations. The pièce de résistance? The custom-designed ‘Nerida Jewel’, valued at over $72,000, which will be awarded to one lucky guest on the night.
