Vol. 1: The Spring Edition
Kicking off with Vol. 1: The Spring Edition on Sunday, November 30, Hillstone Harvest is more than just a long lunch. It’s a six-course love letter to Queensland produce, crafted by Executive Head Chef Nacho Castells – a culinary powerhouse who’s traded Michelin-starred kitchens for creating soulful, produce-led feasts right here in Brisbane. His ethos? Food is the ultimate connector. And when you taste the menu, you’ll get it.
So, what’s on the menu?
Think warm homemade sourdough with saltbush and smoked cultured butter, delicate Mooloolaba yellowfin tuna brightened with fermented cherries, Brisbane Valley quail roulade with a zing of nduja and blood orange, and olive grove wagyu rump rich with native rub and red wine jus. And dessert is a double act: lime sorbet with coconut snow followed by a burnt peach pavlova that screams Aussie summer. Every sip, bite, and detail has been carefully chosen to reflect the rhythm of the season. Australian winemakers will be on hand pouring their favourites, making sure your glass is as full as your plate.
