Brisbane’s dining scene is rapidly earning its place among Australia’s best, often going head-to-head with the culinary giants of Melbourne and Sydney. And at the forefront of this evolution? A once-humble dream turned hospitality empire, helmed by the powerhouse duo behind six acclaimed venues – Agnes, hôntô, sAme sAme, Biànca, Agnes Bakery, and LOS (Land of Smiles). Anyday isn’t just shaping Brisbane’s food scene; it’s defining it, cementing its status as the city’s hottest hospitality group.

Ask any Brisbane local or regular visitor to name their top five restaurants in the city, and we’d bet good money that at least one Anyday venue makes the cut (if not multiple times). What sets their restaurants apart? The mind-blowing flavors? The insanely creative dishes? The effortlessly cool, impeccably designed spaces? The seamless service? The answer is all of the above. Dining at an Anyday venue somehow feels both like being at home and experiencing one of the country’s finest restaurants – all at once.

At the heart of it all are Bianca Marchi and Ty Simon. Whether it’s Bianca’s fiery Italian passion or Ty’s laid-back charm, the secret to their success is hard to pin down. With big plans for 2025 – including whispers of new venues on Edward Street – we chatted with the couple to uncover what makes their business so special and how their relationship fuels its success.

ON LOVE…

Hey Bianca and Ty! It’s a pleasure to chat with you. How did you two meet? Was it love at first sight?

We were lucky—our relationship started with a solid foundation of friendship. We worked together, had a lot of fun and before we knew it, we were inseparable. We fell in love and moved in together. That early connection made it feel easy, and it’s been the same ever since.

What’s your background, and what led you into hospitality?

Ty: For me, it’s always been about people and food. There’s something special about the way food brings people together—it felt like a noble pursuit to create spaces that do just that. From there, we obsessed over every little detail—the lighting, the music, the drinks—making sure each element worked together to create truly authentic and memorable experiences.

Walk us through a typical day in your lives. What does it look like?

Our mornings start early, around 5am—with a warm glass of water in bed before we head off in different directions to exercise and meditate. Then we have breakfast together and plan out the day. Once we hit the office, it’s go, go go. There are reports to go through, emails and catching up with our leadership team. The rest of the day is a mix of one-on-ones, mentoring and keeping things moving. Bianca and I try to carve out a moment in the day—usually over a coffee (or a matcha for Bianca) at Agnes Bakery—to check in with each other. It’s less about what we’re doing and more about staying connected. That’s why, no matter how busy things get, we always take an evening walk along the river. It’s our way of making sure we’re prioritising ‘us’ in the midst of it all.

ON FOOD…

If you had to describe Anyday in three words, what would they be?

Warm, innovative, Brisbane

What are your favourite things about running the business?

Easy—it’s the people. We’re incredibly fortunate to be surrounded by such passionate, positive and talented teams, as well as the amazing guests who walk through our doors every day. That energy is contagious. It’s what drives us, inspires us and makes us want to keep creating new and exciting venues in Brisbane.

What’s been your biggest highlight of Anyday so far?

It’s been the journey we’ve taken with our team. Seeing them grow—whether that’s getting married, starting families, or buying their first homes—makes us feel like we’ve truly built something special. When we opened our first restaurant, we were offering jobs. Now, we’re offering careers. That shift has allowed us to attract incredible talent from around the world, and that’s something we’re really proud of.

Your restaurants have a cult following. Did you ever imagine this when you first opened Longtime?

Honestly, in the beginning, our goal was just to make it through the first three months of the business. We didn’t look too far ahead—we focused on getting the people and the product right and took it one day at a time. Those early days were intense, but we were lucky to have a warm, passionate, and hardworking team by our side. Looking back at that first year, I don’t think we’ve ever felt more alive. Every week was a new challenge and it pushed us to be better and to offer something truly special to Brisbane.

ON NEW VENTURES…

Exciting things are in store for Andyay this year, with multiple new venues on the horizon. Their James St staple, Agnes Bakery, is evolving into Idle – a fresh take on the beloved bakery, now offering a full café experience. But don’t worry, folks – we’ve been assured that their bread and pastries are staying put.

The team is also making moves into the city centre, with several new openings lined up. Golden Avenue is set to launch on Edward Street, dishing up Middle Eastern flavours crafted by director Ben Williamson and executive chef Adam Wolfers (formerly of Gerard’s).

And then there’s the project they’re keeping under wraps – 169 Mary Street. Housed within the heritage-listed Coal Board Building, this four-level dining destination is said to be something special. While details remain under lock and key, we’ve got a feeling it’ll be worth the wait. Stay tuned for more as the team shares an exclusive sneak peek into what’s next.

Tell us about the vibe of the new venue. What can we expect?

We’re deep in planning mode, so we don’t have a lot to share yet—but one thing that always guides us, along with our business partners Ben Williamson and Frank Li, is this simple question: Is this a place we would want to dine in, again and again? That’s always our north star. To the four of us, that means an atmosphere that feels effortless and fun, with food and drinks that are delicious without being overcomplicated. Expect spaces where the energy feels just as right for a long lunch as it does for a celebratory dinner or late-night bite. Think epic playlists, warm and welcoming service and an experience that feels distinctly Anyday.

Why Edward Street? What makes it the perfect home for Anyday’s newest restaurant?

There is a real energy in the CBD—a mix of heritage charm and fresh momentum that makes it an exciting place to be. With so much happening in this part of the city, we love the idea of creating venues that fits seamlessly into the area. Brisbane’s dining scene is always evolving.

How do you see Anyday shaping its future?

Brisbane has come such a long way overall and the impact that its growth has had on the dining scene is incredible. Being part of this means staying true to what we do best: creating exceptional dining experiences that Brisbane people want to be part of.

If you could open a restaurant anywhere in the world, where would it be?

Somewhere in Europe!
