The closing of a beloved restaurant will always send shockwaves through the food community. We all know the pain of losing a beloved food destination can be traumatic, so we are always extra wary of the newcomer. Will the food be as delicious? The menus as extensive? The recipes as innovative? These are always the panicked questions on everyone’s lips.

Let us be the first to tell you that Brisbane’s favourite chicken parmy hub, The Coop Bistro, is about to close its doors to make way for an innovative, mouth-watering new restaurant that sure won’t disappoint. The catch? The restaurant is making a bold move to serve only a plant-based menu, so adios meat. For all you Carnivores out there, you have until October 20 to take advantage of The Coop’s famous 2-for-1 parmys, all-you-can-eat nuggets and $3 tacos.

Whether you are vegan, or you dabble in plant-based eating from time to time, prepare your tastebuds for some deliciousness. The Coop and its big brother The Flying Cock are transforming the current bistro space into a permanent extension of the Gold Coast’s hot-spot I Like Ramen. Co-owner of the restaurant, David Flynn said the immense success of I Like Ramen’s pop-up collaboration with The Coup on Sundays, plus the rising interest in plant-based food options, prompted the makeover.

“We’re going to miss The Coop, especially the parmys that have been an institution in our venue for over four years,” David says.

“We’re looking forward to this next chapter for our bistro space, and are excited to bring the amazing vegan offering from the I Like Ramen team to Brisbane. Their food is delicious, incredibly creative, healthy and one of the most unique in Australia – possibly the world.”

I Like Ramen is set to open in late October or early November at 388 Brunswick Street, Fortitude Valley. An official launch date is set to be announced shortly.
