The foodie gods have finally answered all of our cheesy prayers with the addition of Brisbane’s first licensed quick service eatery to specialise in the gourmet grilled cheese toasie.
Yes, you heard that right! Melt Brothers is a restaurant dedicated entirely to glorious grilled cheese sandwiches.
Justin Kong, who brought us Miss Kay’s (and had our mouths watering over mac’n’cheese on burgers ever since), has teamed up with his brother Felix Kong to bring Brisbane an eatery that is guaranteed to satisfy all your cheesy cravings from 7am Monday to Friday and from 12pm on Saturday.
The humble cheese toastie has been reimagined and Melt Brothers has a style of grilled cheese sandwich fit for a feast from morning to night. They’re even open until 9pm from Wednesday to Saturday for the hungry folk of Brisbane who are looking for a late-night cheesy fix!
We caught up with Melt Brothers owner Felix to ask all your melting questions and to find out when we can finally wrap our hands around one of his delicious grilled cheese toasties.
Why do you think Brisbane is going to fall in love with Melt Brothers?
I think it’ll be the serving size, the big bold flavours and the extremely affordable price point. We basically took one of the staples and re-energised it. Think of Melt Brothers as your cool-ass granny who just knows how to serve up a wicked feed!
What kind of toasties can we expect to find on the menu?
You’ll see our extra cheesy Mouse Trap, which is one of our three all-day grilled cheese sandwiches. Our Morning Glory is our all-day brekky option, which is filled with Maple Streaky Bacon, cheddar cheese, two fried eggs and topped with sriracha mayo. You can even load them with tater tots (potato gems) inside. These pair SO WELL with our Fonzie Abbott Coffee in the mornings.
Then we have The Meltdown, which is our pulled pork grilled cheese sandwich along with The New Yorker: our very own take on the Reuben. There’s also our buttermilk-fried chicken grilled cheese sandwich, which is lovingly known as BFC.
What is the ultimate Melt Brothers signature cheese toastie?
I think the Mouse Trap, Morning Glory, New Yorker and our BFC will be the go-tos for all the cheese heads out there!
What will we be washing all of this cheesy goodness down with?
We have teamed up with some great local brands for our drinks list. Starting with Fonzie Abbott for our coffee and Stone & Wood and Balter for our selection of craft beer, along with the uber-popular Peroni, Corona and Milton mango (XXXX Gold). We also sell Somersby cider, Brookvale alcoholic ginger beer and a house red, white and sparkling.
