Winnifred’s Pops The Cork On Brisbane’s First Champagne-Dedicated Bar & Bistro
Let's toast to that
By Bianca Licina | 17th June 2025You know Brisbane’s dining scene is levelling up when a bar entirely devoted to Champagne — the drink of the gods — prepares to pop its cork.
Opening this August in the heart of Fortitude Valley, Winnifred’s Champagne Bar is not your typical inner-city hotspot. It’s a love letter to Champagne in all its nuance and luxury, curated by those who know the difference between a good glass of bubbles and a truly exceptional one.
Not just a Champagne bar
Forget one-size-fits-all venues – Winnifred’s is designed to be explored. Set inside a meticulously restored, multi-storey Arthur Street space, the bar spans across five unique areas, each named after a subregion of Champagne, offering a layered experience that moves from casual drop-ins to full-blown celebrations:
Coteaux du Petit Morin: A leafy 16-seat Champagne garden for walk-ins and aperitifs under the sky
Marchand de Vins: A luxe Champagne concierge and boutique where you can browse and take home your favourite bottles.
Vallée de la Marne: An intimate 18-seat bar and cellar perfect for refined tastings and deep dives into grower Champagne.
Montagne de Reims: A 60-seat bistro designed for long lunches and elegant dinners, where Champagne and cuisine come together seamlessly.
A collaboration between founder Megan Nunn, architect Tim Stewart, and Bespoke Constructions, the space strikes the perfect balance between European elegance and Brisbane’s laid-back charm – velvet textures, clean lines, and ambient lighting.
The vision behind the bubbles
At the heart of Winnifred’s is founder Megan Nunn – a Champagne aficionado whose obsession with the French region led her to create a platform that celebrates its under-sung stars.
Her travels introduced her to the world of small, grower-producer Champagne — expressive, family-made wines crafted with care and individuality. Through her company (also called Winnifred’s), Megan began importing these rare gems into Australia — and now, she’s pouring them by the glass at her namesake bar.
In the kitchen
Winnifred’s food offering is just as considered as its bottle selection. Helmed by award-winning chef Antoine Potier (formerly head chef at e’cco Bistro and sous chef at Restaurant Dan Arnold), the menu mirrors Champagne’s complexity — light and elegant with a touch of indulgence.
Inspired by the culinary traditions of the Champagne region and guided by seasonal local produce, Potier’s dishes are designed to complement, not compete with, what’s in your glass. Expect elevated bistro fare: oysters, tartlets, artful small plates, and larger dishes that invite long, lingering meals.
Let’s make a toast
Ready to pop the cork? Winnifred’s is where you’ll learn the difference between blanc de blancs and blanc de noirs, while nibbling on perfectly paired fare in a setting that feels equal parts Paris and Brisbane.
Opening this August. We’ll see you there.
