This Lush Thai Rooftop Bar & Restaurant Has Just Taken Over Dirty Sultan

Modern Thai, Elevated

By Bianca Licina | 23rd October 2025

We’ve all spent a rogue night on a Fortitude Valley rooftop — and now there’s a new one joining the crew. Look up and you’ll find TABOO, a modern Thai rooftop ready to impress. Formerly Dirty Sultan and the sister restaurant to Mr. Vain, TABOO sits atop The Constance Hotel, blending bold, modern Thai flavours with a lush, otherworldly setting.

Perched above the city, this lush restaurant and bar transitions effortlessly from sunlit mornings to sultry, moody evenings. The monochrome-green oasis, framed by sculpted greenery, clean lines, and artful lighting, is perfect for long brunches, evening cocktails, or a leisurely dinner under the stars.

Phase 1: breakfast & brunch

TABOO has officially launched Phase 1, serving modern Thai breakfast and brunch. Head Chef Alec Kapitz, formerly of Cloudland, and Executive Chef Benson Skelton have created a menu packed with vibrant, inventive dishes. Highlights include Thai Eggs Benedict with crispy roti and pork belly, King Prawn Scramble with red curry butter, and indulgent sweets like Coconut Pancakes with whipped coconut cream.

The Brunch Club Banquet offers a share-style experience that previews what’s coming for lunch and dinner, featuring dishes like Oysters with Nam Jim Granita and Crying Tiger Wagyu Striploin infused with mango.

Complementing the food is a specialty drinks program featuring refreshing cocktails, house-made juices, and standout coffee infusions from ST. Ali Coffee.

More to come

Phase 1 is just the beginning — TABOO’s lunch and dinner menus are coming soon, promising a deeper culinary journey that moves from the brightness of morning to the heat, spice, and drama of evening dining.
