A Turkish-Inspired Wellness Café By The KAILO Team Is Coming To West End

When it comes to Australia’s wellness landscape, few names carry as much influence as KAILO, from the luxurious medispa inside The Calile Hotel co-founded by Kristy Morris and Kath Merlo, to KAILO Nutrition, the supplement brand Morris launched with her husband, entrepreneur Dr Oz Dedehayir. Together, the ventures have helped shape modern wellbeing – and now, they are serving up an exciting new concept for 2026.

Enter Süreyya Kahve by KAILO Nutrition, a new café opening within Function Well’s new West End flagship. The space blends Dr Dedehayir’s Turkish heritage with Morris’s passion for health and wellness, creating a cafe experience that Kristy says “redefines the current state of cafe culture… a space where people can come and feel part of [their] growing community.”

Launching a new venture wasn’t on the duo’s agenda for 2026, but when Function Well founder Darren Bain presented the opportunity, it was an opportunity they couldn’t pass up. “KAILO as a brand has always aligned in values and maintained a strong relationship with Function Well, combining our passion for wellness, longevity and community,” Morris says. “With my passion and commitment to delivering exceptional service, combined with my background in hospitality, and Oz’s expertise in innovation and technology, taking this next step in our vision to expand the KAILO ecosystem felt like a natural choice.”

Named after Dr Dedehayir’s late grandmother, Süreyya holds deep personal significance, with recipes inspired by her very own cookbook. The menu takes these traditional Turkish recipes and gives them a modern, wellness lens: nutrient-dense salads, elevated sandwiches, and protein-rich smoothies powered by KAILO Nutrition’s award-winning supplements. Coffee, naturally, comes courtesy of Melbourne favourite ST. ALi. “Every single item on the menu will be scientifically-backed, containing only the best, premium ingredients to fuel our guests,” says Morris.

While Middle Eastern cuisine is known for its irresistible desserts like baklava and kunefe, they’re not exactly the most nutritious of dishes, often filled with heavy creams and sugar. At Süreyya Kahve, with the help of KAILO Nutrition, refined sugars are replaced with healthier alternatives, protein-rich ingredients are prioritised, and dishes are topped off with a ganache made with KAILO Nutrition.

“For me, while there are many familiar items on the menu with a slight twist, my favourite is the Strawberry Gum Overnight Oats,” says Dr Dedehayir. “For Kristy, she’s most excited about the creative side of the drinks menu. Her personal favourite is the Chai Choc Peanut Butter Smoothie.”

Designed as a hub for connection as much as nourishment, the space promises refined service and a menu grounded in science but dished up with heart. The best part? You don’t need to be a member at Function Well to dine at the café.

Middle-Eastern-inspired interiors

With Muscolino Shaw leading the interior design and Lowry Group heading the fit-out, an A-list team is bringing the street-facing space to life while seamlessly complementing Function Well’s aesthetic. “We’re embracing deep, rich tones to create a moody atmosphere while honouring Middle Eastern heritage with a modern twist,” says Kristy. “Maroon marble features and sculptural arches are complemented by subtle touches of gold.”

A place for heritage, hospitality, and wellness to converge, West End locals have just gained their new go-to spot for healthy eats.
