By Victoria Lewis | 27th October 2026Perched above the Coral Sea, directly above Avani Mooloolaba Beach Hotel, a new rooftop companion, an open-air restaurant and bar that already feels like a local, in every sense of the word. Take a seat at the Sunshine Coast’s latest beachside venue, Sully’s Rooftop, and be met with the reason that people continue to flock to this little slice of Australian paradise. Positioned in the heart of Mooloolaba, with front-row seats of the ocean in every direction, this new rooftop bar is exactly what your next Sunshine Coast getaway is calling for.
Arriving in style with vibrant, art-deco interiors and a menu full of Australian nostalgia, Sully’s is perfectly poised to be your next golden hour cocktail destination, inspired by the coastal culture it resides in. Want to get to know Sully? Here is everything you need to know about your new beachside companion.
Golden hour vibes
The idea behind Sully’s was to have the same energy as a friendly local who’s lived in town for years – brought up by the beach, unpretentious, and a little bit cheeky. Sully’s is a rooftop bar that’s as relaxed as it is upscale, perfecting the balance between somewhere you could go after a beach day for a share plate and a pint, and a perfect spot to take the girls for your next cocktail catch-up.
The fit-out by Queensland local Taryn Raso of Studio Raso Interior Design, who also designed the adjoining hotel, aims to complement the panoramic view with clean, coastal lines and a nod to Mediterranean styling. Citrus umbrellas are set against warm timber, oversized greenery accents intimate lounge seating, and velvet upholstery contrasts the rolling waves of the beach below.
“We wanted it to feel social, relaxed, and slightly nostalgic,” Taryn says, “somewhere people could feel completely immersed in the atmosphere of the coast.” Utilising the skills of local artisans and tradespeople for many of the custom details and furniture pieces means Sully’s has been shaped by its surrounds in more ways than one.
A menu full of Aussie favourites
The local connection continues with a menu dedicated to local trawlers and producers, where share plates of freshly shucked oysters, lime-cured Mooloolaba yellowfin tuna, and charcoal-kissed king prawns make frequent appearances. Playful references to Australian childhood staples, including a smoked wagyu beef sausage that tips its hat to the Bunnings barbecue, only add to Sully’s nostalgic charm, sitting appropriately alongside cocktails made with quintessential local ingredients like Davidson plums and macadamia nuts. It’s the very best of Australian cuisine, using local ingredients to create innovative flavours you’ll dream of long after the last bite.
Open every day from 11am to 10pm, Sully’s is prepared for anything. Catering to every occasion with everything from light bites to full dining experiences, you wouldn’t be the first to turn a casual drink into an evening worth remembering.
As for the eternal question: who is Sully? Think of him not as a single character but a feeling. That feeling of endless summer days, sun-kissed skin, and afternoons that stretch out until the sun is a whisper on the horizon. Sully’s Rooftop bottles that feeling and serves it on ice.
