With a reputation built on his Melbourne institutions like Maha, Maha North, Maha East, and Jayda, Delia has spent the past 17 years redefining Middle Eastern cuisine in Australia. Now, he’s bringing that same passion and dedication to quality to Queensland’s thriving dining scene.
What to expect
While all of his venues have a Middle Eastern influence, Layla will take a broader approach, incorporating fresh Queensland produce and global inspirations, perfectly suited to the subtropical climate.
At the helm of the kitchen is Head Chef Simon Palmer, whose impressive resume includes stints at Black Hide by Gambaro, Urbane, Gerard’s Bistro, and E’cco Bistro. Working closely with Delia and his team, Palmer is crafting a menu that is as immersive as it is flavourful, drawing from the Middle East, the spice-laden subcontinent, and beyond.
