Establishment 203 is set to bring an international standard of dining to 6 Marshall Street, helmed by esteemed chef and beef connoisseur Ben O’Donoghue (previously Billykart Kitchen). Infused with an Italian sensibility honed through Ben’s travels in Europe and the venue’s owners – a generational cattle farming family with Italian heritage – the restaurant will lean on Queensland’s highest quality beef to offer a refined farm-to-table experience.
With the curated menu featuring traditional Italian pastas and the very best steak in town, each dish is underpinned with a combination of exceptional ingredients and kitchen technology that captures the best of old and modern cooking. In fact, Establishment 203 will be home to Queensland’s first Michelin-quality MKN induction cooking suite as well as large and live wood-fired Mibrasa cooking stations – this ain’t your grandma’s kitchen, folks!
The open dining area will give guests front row seats to Chef Ben’s world-famous wood cooking talents, using Gidgee Wood Charcoal sourced sustainably to add a unique flavour profile that complements the seasonal produce from the land, sea, and rivers. Of course, steaks and sips go hand in hand, and Establishment 203 is delivering on the drinks menu with trademark cocktails, rare Italian reds, and a comprehensive selection of Brisbane craft beers.
