A Birria Taco Street Pop-Up Is Coming To Woolloongabba

Woolloongabba just got a whole lot spicier. Birria Boy, the latest project from the AW Hospitality team behind C’est Bon and Le Bon Bar, lands at Clarence Corner this Friday, 17 October – it’s bold, it’s messy, and it’s all about flavour that hits hard.

What’s cookin’?

At the heart of the menu? Birria tacos. Think slow-cooked goat or beef, crisped and ready for dunking into a rich, smoky consommé. Add fresh masa tortillas, wood-fired corn, and shareable plates perfect for friends, and you’ve got a menu that’s casual, fun, and downright tasty. Each tortilla starts with authentic Mexican masa flour, nixtamalized for that earthy, full-bodied flavour that keeps people coming back for more.

The bar is just as lively as the food. Tequilas, mezcals, and agave spirits from small Mexican growers sit alongside local Beudi Agave from Far North Queensland. Frozen margaritas, slushie cocktails, or Mexican lagers on tap (crafted with Frenchies Brewery and Sea Legs Brewing Co) make it easy to sip, savour, and linger.

The where and when

Housed in a heritage building on Clarence Corner, the space has been given a slick reboot thanks to JDA Architects, Sophie Hart Design, and ICU Design. The woodfire oven – rescued from its Vespas Pizza days – glows at the centre of the kitchen, turning every dish into a little moment of theatre.

Open Thursday to Monday for dinner, and lunch Friday to Sunday, Birria Boy is perfect for a pre-show bite at The Princess Theatre or a late-night taco run. “It’s approachable, full of flavour, and a place to get your hands messy,” says Chef Andy Ashby. And honestly, that’s all you need to know.

Opening this Friday from 4 PM, we’ll catch ya’ there with a taco in one hand and a margarita in the other.
