FIG ’N’ CLOUDY

SERVES: 2

INGREDIENTS:
• 80ml vodka
• 60ml Esprit de Figues
• 30ml fresh lime juice
• 60ml cloudy apple juice
• Sliced apple rounds

GLASS PREP
• Lime zest sugar (see recipe below)
• 2 x small plates

METHOD:
1. Prepare glasses by filling one plate with water and the other with lime sugar
2. Dip the rim of each glass into water and then into the lime zest sugar and leave to dry
3. Combine liquid ingredients in a cocktail shaker with ice and shake it like a polaroid picture before pouring into glasses 4. Cut half way through the middle of an apple round and slide onto glass rim

LIME ZEST SUGAR INGREDIENTS:
• 1-2 limes
• 1/2 cup of granulated white sugar

METHOD:
1. Using a fine micro-plane, zest lime rind into sugar
2. Mix together and leave to dry out for 30-60 mins
3. Transfer to a jar and keep refrigerated, shaking jar occasionally to allow the natural oils to evenly absorb into the sugar
